But what Madame Gautier did not realize was that one year before, a bomb had been set off in the international world of French cuisine, and it had been lit by a tall, gangly American, a woman from Pasadena, who loved French food as much as Madame, and loved life and loved Paris even more. With the 1961 publication of the first volume of Mastering the Art of French Cooking, by Julia Child and her French collaborators, Simone Beck & Louisette Bertholle, Madame’s rants would be rendered ever more obsolete.
